Our VisionMeals
Meals will be satisfying, tasty, and vegetarian, based on a variety of locally grown fruits and vegetables, handmade corn tortillas, beans, and grains. The tortillas, made by hand and cooked over a wood fire, are fashioned from locally grown organic corn. In season, there are delicious tropical fruits, including mangos, papayas, guayabas, and many others unknown in the north. Organic eggs from our chickens, and cheese from our goats, when available, will be included.
Amatlan Hill Top Village

Bottled water is used for all cooking and drinking. To avoid intestinal illnesses, all fruits are peeled, and raw vegetables or salads are not served; we provide sprouts as an alternative. If you have special dietary needs, please let us know beforehand. Although we will do our best to accommodate special needs, please be aware it is not possible for us to provide individual meals for all participants. On alternate days, breakfast will be eaten in silence, to encourage mindfulness of eating.
